Chateau Chevalier - Cabernet Sauvignon 2003

I bought this bottle by recommendation by the guy at Plum Market a few weeks ago. At $20 it was a gamble but thought it was worth a shot. Before anything I checked out the website and discovered that Chateau Chevalier only make 2 wines, a Cabernet Sauvignon and a Sauvignon Blanc. The 2003 is completely sold out on the website and they are now pushing the '04 vintage. I checked my bottle and low and behold I had an '03 so I thought this might be good. From the color perspective, the wine was a deep ruby with moderate legs. The tannins were soft while the body was plush and full of fruit. Not too sweet and the oak stretched the finish on the back of your tongue.
I opened the bottle last nite while it was still cold and tight. After 24 hrs the wine began to change and show some of its true characteristics. I would probably buy again and do like the idea of a vineyard that is so small and only makes 2 styles.
