L.Mawby Consort

I was craving some sparkling so we opened up a bottle of L. Mawby's Consort last nite and it was great. It was sweet and smooth with lots of little bubbles. The Consort is made from Chardonnay and fermented in a stainless steel tanks before bottling. I generally perfer an oak barrel for additional flavor but steel tanks can produce some very good and clean flavors. With it being a Sec, its on the sweeter side but not too much and not quite a dessert wine.
The dryness scale goes as follows: Extra Brut, Brut, Extra Dry, Sec, Demi Sec and Doux. Most of your wines will be labeled Brut which is just a small dose of sugar and tend to be very dry.
We also have a bottle of L. Mawby's Talismon which is a cuvee, brut and fermented in oak. I am looking forward to drinking this one and havn't decided if it will be my New Years Eve bottle or not.
